Smashed Purple Potato

3 lb small Purple Potatoes (purple flesh preferred)
2 oz Avocado Oil, split in half
Salt, Kosher
Preheat oven to 325 degrees.
Toss potatoes with the Avocado oil in a large bowl and sprinkle with salt. Place the potatoes on a baking sheet and roast for 20-30 minutes or until tender. Remove from oven and lightly smash each potato with the back of a large spoon to expose the flesh of the potato. Lightly drizzle remaining oil over the smashed potato and return to the oven. Turn the oven to broil and cook for about 5 more minutes or until potatoes are browned and crispy.
