¼ cup Sugar or Honey
½ cup Water
1 small Jalapeno, fresh seeds removed
4 sprigs Thyme, fresh (on the stem)
5 cups Watermelon, seeds removed and ½ inch cubed
4 cups Ice
Place the sugar/honey, water, salt, jalapeno and thyme in a small saucepan and heat over a medium heat until the sugar and salt have dissolved (8-10 minutes). Remove and set aside the jalapeno and thyme.
Place the watermelon and water mixture in the bowl of a blender and puree well.
Place Ice in 4 glasses, evenly pour the watermelon cooler into the four glasses and garnish each glass with a sprig of the reserved thyme.
